For summer salads everyone will fall in love with, just add blueberries. Blueberries are a summer superfood that add a sweet tangy top note to any salad, but they especially shine in recipes like Blueberry, Watermelon, Cucumber and Feta salad, or Blueberry Soba Noodle Salad. If you want to learn more about these little blue fruits, check out last month's blog for 10 things you didn’t know about BC blueberries!
Salads that pack an extra punch of protein are a smart way to enjoy a satisfyingly chill lunch and stay energized on warm afternoons. Try a Steak and Berry Salad (tip: throw some Okanagan nectarines or peaches on the grill when you’re prepping the steak to add a tangy sweet note to this green salad); or Steakhouse Skewers with Hail Kale Caesar to keep you powered up. For a salad that’s the perfect mix of crisp and crunch, fill a Mason jar with Larb Mu, a Thai salad that features layers of fresh lettuce; sweet and spicy pork; sliced carrots and herbs topped with salted peanuts. To load up on plant protein, enjoy a Blueberry Superfood Salad from kale, quinoa, hemp hearts and blueberries.

As the evenings cool off, try these savory salads to perk up your main course. Warm Potato Salad is a summer staple that belongs on every table: just take local potatoes and dress them in lemony mustard with local herbs for a fantastic pop of flavour. Or toss Kale and Caramelized Wild Mushrooms with local goat cheese, sherry and honey to make a satisfying main dish. Panzanella salad made with greenhouse grown Roma tomatoes is a classic Italian summer salad that combines the sweetness of perfectly ripe tomatoes with the satisfying crunch of bread toasted in olive oil. And if you’re looking for something that will really wake up your tastebuds, try this North Arm Beet Salad -- it combines yellow and red beets with chimichurri accented by blue cheese.
