Ingredients
- 8 slices seedless cucumber
- 4 Campari tomatoes on the vine, sliced
- 1 tin sockeye salmon
- 2 tbsp liquid saved from salmon tin
- 10 grams red onion, finely diced
- 2 tsp mayonnaise
- 2 tsp lemon juice
- ½ tsp Japanese soy sauce
- 2 pinches sugar
- 2 g fresh cilantro, chopped
- salt & ground black pepper
- 2 sprigs cilantro, for garnish
Instructions
- Arrange tomato slices in a circular “petal” pattern on a plate.
- Arrange cucumber slices inside circle of tomatoes.
- Place salmon pieces (1/2 of can contents per person) on top of cucumbers. Set aside.
- Pour 2 tbsp salmon tin liquid into mixing bowl. Add finely diced red onion, mayonnaise. Mix well.
- Add soy sauce, sugar, chopped cilantro, lemon juice. Lightly season with salt & pepper. Mix well.
- Spoon dressing over salad arrangement.
- Garnish with cilantro, serve.
