Sockeye Salmon And Campari Tomato Salad

Ingredients

  • 8 slices seedless cucumber
  • 4 Campari tomatoes on the vine, sliced
  • 1 tin sockeye salmon
  • 2 tbsp liquid saved from salmon tin
  • 10 grams red onion, finely diced
  • 2 tsp mayonnaise
  • 2 tsp lemon juice
  • ½ tsp Japanese soy sauce
  • 2 pinches sugar
  • 2 g fresh cilantro, chopped
  • salt & ground black pepper
  • 2 sprigs cilantro, for garnish

Instructions

  1. Arrange tomato slices in a circular “petal” pattern on a plate.
  2. Arrange cucumber slices inside circle of tomatoes.
  3. Place salmon pieces (1/2 of can contents per person) on top of cucumbers. Set aside.
  4. Pour 2 tbsp salmon tin liquid into mixing bowl. Add finely diced red onion, mayonnaise. Mix well.
  5. Add soy sauce, sugar, chopped cilantro, lemon juice. Lightly season with salt & pepper. Mix well.
  6. Spoon dressing over salad arrangement.
  7. Garnish with cilantro, serve.
