BC Raspberry Cake

Ingredients

  • margarine or butter – 1/3 cup
  • sugar – 1 cup
  • egg – 1
  • vanilla – 1 tsp
  • flour – 2 cups
  • baking powder – 3 tsp
  • salt – 1/4 tsp
  • milk – 1 cup
  • BC raspberries – 2 cups

Instructions

  1. Cream margarine/butter and sugar.
  2. Add well beaten egg and vanilla.
  3. Add dry ingredients with milk, beat just enough to keep batter smooth.
  4. Pour into a greased floured pan. Sprinkle raspberries on top.
  5. Bake at 375 degrees for 30-40 minutes.
  6. Frost with vanilla icing while still warm.
