Caramelized Peach Tarte Tatin

Ingredients

  • 4 Peaches
  • 250 mL (1 cup) Sugar
  • 15 mL (1 tbsp) Water
  • 15 mL (1 tbsp) White Corn Syrup
  • 225 g (½ lb) Store Bought Puff Pastry Dough
  • 500 mL (2 cups) Cream
  • 60 mL (¼ cup) Icing Sugar
  • 5 mL (1 tsp) Vanilla

Instructions

  1. Preheat oven to 200°C (400°F).
  2. Blanch peaches, peel and cut in half.
  3. In a small saucepan, bring sugar, water and corn syrup to a boil; simmer over medium heat until a golden caramel forms (about 5 minutes).
  4. Pour caramel into a 20 cm (8 inch) ovenproof frying pan.
  5. Arrange peaches cut-side up on caramel.
  6. Roll out dough into a 20 cm (8 inch) circle.
  7. Place over peaches. Bake for about 30 minutes until golden.
  8. Cool slightly.
  9. Whip cream with icing sugar and vanilla.
  10. Cover pie with a serving plate and flip upside down.
  11. Serve with whipped cream.
