Creamy Prosciutto Sauce

Ingredients

  • 45 mL (3 tbsp) Butter
  • 1 chopped, finely chopped Shallots
  • 60 mL (¼ cup) chopped Prosciutto
  • 125 mL (½ cup) chopped, rehydrated, Sun-dried Tomatoes
  • 250 mL (1 cup) shredded, Canadian Aged Cheddar Whipping Cream
  • 250 mL (1 cup), 33% Sage
  • 30 mL (2 tbsp) finely chopped Salt
  • To taste Cracked Black Pepper
  • To taste, fresh ground Penne or other Short Pasta

Instructions

  1. In a large frying pan, melt butter over medium heat and cook shallot and prosciutto until golden.
  2. Add tomatoes, cream and cheese.
  3. Continue cooking 2 to 3 minutes.
  4. Salt and pepper, to taste. Add sage.
  5. Serve hot over cooked pasta.
